October 31st, 2023 Food and Agriculture Education Project─Visit Zuozhen Community
CJCU USR Dawulun Community Office applied to the Ministry of Agriculture for the "Food and Agricultural Education Promotion Project," with cassava as the main focus. Cassava is also a staple food in Tanzania and Burundi, Africa.
Zuozhen Community still preserves the traditional method of washing cassava. However, they focus on another type of root vegetable called "Arrowroot" which is crucial for their community as a food and starch source.
On the day of the visit, the chairman of the Zuo Zhen community and team members guided everyone through the cultivation and dietary practices of Arrowroot. They demonstrated the process of crushing and washing freshly harvested Ge-Yu-Jin to make powder. Participants also had a DIY experience making mochi desserts from Arrowroot powder. Although only 1.5 kilograms of powder can be obtained from 10 kilograms of Arrowroot, preserving ancestral traditional wisdom and environmental protection is a goal strongly promoted by the Zuo Zhen community!
International Students Win the USR Expo South "USR Talk - Future Stars"
Sindi from Eswatini won as the champion with the theme "Be a Changemaker," introducing the Care Project practised in Taiwan and Africa. Launched in Taiwan in 2020, the project focuses on environmental care, women's issues, and health. In 2022, it expanded internationally, and this year, Sindi returned to Eswatini, and also went to Tanzania and Burundi to implement the project, sharing valuable experiences— it was so awesome that males actively engaged in the projects.
Abel from Burundi, currently a third-year student in the International Program in Sustainable Development (IPSD), is bringing his experiences from Taiwan (Keyhole Garden, Health Care, and Biochar) back to his home community this year. He aims to address local issues and make a positive impact.
October 11, 2023 Coffee workshop
According to reports, each person in Taiwan consumes 1.77 kilograms of coffee per year, equivalent to drinking 177 cups annually. International student Sindi, coming from Eswatini where coffee beans are not produced, found the Taiwanese love for coffee intriguing. Despite not having a coffee-producing background, she once planned to make coffee her entrepreneurial project in the future. Sindi embarked on learning the process of solar-powered coffee brewing through the USR project and has been guiding Albert from Burundi based on what she learned.
